Friday - Mushroom risotto

Have no idea what to do today. Sometimes I just want to stay in and do nothing... literally nothing. But it would be a waste of a saturday so I guess I find something to do. In retrospective I´ m allways glad I did.
I'm planning on posting something later today. What should it be about? Suggestions? :)

Have a great day! :) XOXO Nicky ♡

Wine tips

A few days ago we had Lamb Stew with some great red wine for dinner. I know that it’s not exactly a summer dish but it’s not exactly summer weather so...  :)  Passitivo is an inexpensive red wine. It has a fruity, spicy flavor with hints of barrel, dark cherry, currants and thyme. It’s perfect with lamb, but also good with other meat dishes. Make some delicious food, have a few glases of wine, kick of you shoes and chill out!  ;) :)

I hope you are having a relaxing evening where ever you may be! :) XOXO Nicky ♡

LCHF

This bread you can eat with a clear conscience even if you are on a diet, because it contains almost no carbs at all! Isn’t it amazing! :)

Time: 1.5 hours

Ingredients:
 200 g (3DL) flaxseed
50 g (1dl)
sesame seeds
50 g (0.75 ml) hazelnuts

50 g (0.75 ml) almond
50 g (0.75 ml) Psyllium seed husks
2 teaspoons baking powder

1.5 tablespoons bread spices

Mix all the nuts and seeds to a "powder/flour " in a blender.
Then mix together:
50 g melted butter, 1 cup (1dl) sour cream, 250 g cottage cheese and 6 eggs.

Mix it all together and pour into a oblong bread pan lined with parchment paper, (I took some sunflower seeds on the bread, but it is optional). Bake for 60-80 minutes (depending on oven) at 175 degrees. Remove the he bread from the bread pan and allow to cool. Cut into thin slices and enjoy! :)
Hope you are having a beautiful day! :) XOXO Nicky ♡

Homemade Sushi

Yesterday we spent the day making sushi with my best friend (who also happens to be my sister in low) and her family. Well, I was just rooting them on so to speak and taking pictures ;P :) It was fun to learn from Peter and Timea since they had done this before. We made way too much for us to eat in one night, but it was yummy and lots of fun!

Wish you all a very nice sunday afternoon a great week ahed! XOXO Nicky ♡

Big big favorite of mine!

Yesterday I came across this image that I have taken a while ago and it gave me the worst lobster craving EVER!! I definitely have to make this again soon – it looks so good! So my prediction is that, this will be on my table in the very near future!

Baked lobster with hints of sage and lime

Ingredients: lobster, butter, fresh sage, parsley, garlic, salt, black pepper, lime.

Preheat the oven to 275 degrees. Split lobsters in half and put them in a roasting pan.Mix the butter with sage, garlic, salt, pepper, lime zest and lime juice of half lime.Click the herb butter on the lobsters and cook in top of oven for 5 minutes. Servedwith garlic bread.
